Weisswurst
Weisswurst is a traditional Bavarian sausage made from finely minced veal and pork back fat, seasoned with parsley, lemon, mace, onions, and salt. Its pale color gives it the name “white sausage.” Unlike most sausages, Weisswurst is not smoked and is typically poached gently in hot water rather than boiled.
