MAKING:
After harvest, the grapes are destemmed and, after a short, cool maceration, the grapes are pressed before fermentation, which takes place with a slow increase in temperature. This practice preserves the crisp, floral aromas of the Chardonnay must in the finished wine. After fermentation, the wine spends several months on the lees to give the wine body and depth of aroma.
TASTING NOTES:
The aroma and taste reveal a healthy, well-groomed wine with citrus and green apples in the driver’s seat with undertones of melon and white flowers. This is a wine with good balance and natural fullness; a chardonnay that you want to drink more than a single glass of. The wine’s modest 12.5% alcohol is far from high-strung overseas chardonnay, and the wine’s profile is also classic and ‘cool’ in the ‘right’ way.
PAIRING:
Oven-roasted chicken, a cream-based pasta dish with mushrooms, or by the glass in the evening.
